The vintage and its variations inevitably influence our wines. Every year, we play a new score in the vineyard and cellar. However, one truth remains immutable: Anjou is the kingdom of chenin! This grape variety is an exceptional transmitter of terroir. Its union with the region's diverse soils offers a multitude of possibilities. To be honest, whether dry or sweet, we love making white wine!

Our sweet wines have one thing in common: sorting! Making a wine with residual sugar is a balancing act. Like a chef composing a recipe, each time we visit the vineyards we pick grapes at different stages of over-ripeness. Thanks in part to the presence of the Layon, bunches are more or less affected by botrytis, but also by passerillage. This brings intensity and concentration or, conversely, liveliness and freshness. Behind each cuvée of sweet wine are several passages through the vines to sort the grapes for the best balance.
